Cioppino Nana JuJu's Way
Serves 4
1 yellow onion, diced
1 shallot, diced
1 28 ounce can fire roasted tomatoes, pureed in blender
6 cloves garlic, minced
½-1 tsp red pepper flakes
½-1 tsp fennel seeds
1 tsp oregano
½ tsp thyme
¼ cup fresh basil, minced
¼ cup fresh Italian parsley, minced
4 cups vegetable/seafood broth
1 ½ cups Pinot Grigio
1 pound scallops, cut into small pieces
2 pounds Georgia shrimp, deveined
2 pounds salmon filet, cut into small pieces
Saute the onion, shallot, garlic, red pepper flakes, fennel seed, oregano, and thyme in olive oil for 10 minutes. Add the blenderized tomatoes, the broth, basil, parsley and wine. Cook over slow heat, adding salt and pepper to taste for approximately 20 minutes. Add the seafood and cook for 10 minutes. Serve with baguette
